As you know, I’m not only a passionate pizzaiolo but also love to grill. When grilling, there’s a side dish I look forward to all year round: green asparagus. Since asparagus is only available seasonally, every opportunity to prepare it is special. At our last barbecue, a stalk of green asparagus was left over, and as I was thinking about what to do with it, the brilliant idea struck me: Why not use asparagus on a pizza?
I knew that not everyone has a grill next to their pizza oven, so I thought of an alternative. That’s how I came up with the idea of using the cast iron pan, which is perfect for our Witt Rotante pizza oven. This pan is a true all-rounder – you can use it not only for asparagus but also for fantastic steaks or Pimientos de Padrón.
And so this recipe was born: a green asparagus pizza prepared only with the pizza oven and the cast iron pan.
What Makes Green Asparagus Pizza So Special?
Asparagus on pizza might sound surprising to some, but this combination is simply heavenly. Green asparagus brings a crisp texture and a light sweetness that harmonizes wonderfully with the salty Prosciutto Crudo and the flavorful Parmesan. This dish is a real eye-catcher and a treat for the palate for anyone who wants to try new pizza variations.
Perfect Preparation: Equipment and Ingredients
For this recipe, we use the round frying/cast iron pan from Witt and the Witt Etna Rotante gas pizza oven. These tools help us create a perfect Neapolitan pizza that is airy on the inside and wonderfully crispy on the outside.
Ingredient List for Asparagus Pizza:
- Neapolitan pizza dough ball
- 1 bunch Green Asparagus
- Parmesan
- Fior di Latte
- Prosciutto Crudo
- Olive oil
- Salt
- Black pepper
Step by Step: Preparing the Green Asparagus Pizza
- Prepare the pizza oven: Preheat your pizza oven and place the empty cast iron pan inside to heat up.
- Prepare the asparagus: Wash the green asparagus thoroughly and break it at the natural breaking point or cut off the woody ends (green asparagus does not need to be peeled).
- Season the asparagus: Brush the asparagus with sunflower oil and season with coarse sea salt.
- Sear the asparagus: Remove the hot pan from the oven and place the asparagus side by side in it. Return the pan to the oven and sear the asparagus. After about 3 minutes, turn it so it develops nice roasted aromas on all sides.
- Cut the asparagus: Cut the asparagus into approx. 2 cm long pieces and set them aside.
- Top the pizza: Spread out the pizza dough with your hands as is customary for Neapolitan pizza. Brush it with olive oil and top with Parmesan, Fior di Latte, and the asparagus pieces.
- Shape the pizza: Slide the pizza onto the pizza peel and shape it to its final size. Finish topping it.
- Bake the pizza: Bake the pizza at a stone temperature of approx. 420-450 °C for about 60-90 seconds.
- Season the pizza: Once the pizza is baked, place it on a cooling rack and season with salt and black pepper.
- Serve the pizza: Cut the pizza on a board and top each slice with a slice of Prosciutto Crudo. Serve immediately.

Ingredients
- 1 Stk. Neapolitanischer Pizzateigling
- 5 Stk. Grüner Spargel
- 1 EL Rapsöl
- Parmesan
- Fior di Latte
- Prosciutto Crudo
- Olivenöl
- Salz
- Schwarzer Pfeffer
Instructions
- Pizzaofen aufheizen, leere Gusseisenpfanne hineingeben.
- Spargel waschen, holzige Enden entfernen.
- Spargel mit Rapsöl bestreichen, salzen, in heißer Pfanne anbraten.
- Spargel in 2 cm Stücke schneiden.
- Pizzateig ausbreiten, mit Olivenöl, Parmesan, Fior di Latte und Spargel belegen.
- Pizza formen, fertig belegen, bei 420-450 °C für 60-90 Sekunden backen.
- Pizza auf Auskühlgitter legen, mit Salz und Pfeffer würzen.
- Pizza aufschneiden, mit Prosciutto Crudo belegen, servieren.
